Instructions

Preheat the oven to 375 degrees. In a large oven-safe skillet, heat oil over medium heat. Season well with salt and pepper, then fry until golden, about 4-5 minutes for each side. Transfer the chicken to the plate.

Return the pan to medium heat. Add garlic and cook for one minute. Add thyme, red pepper flakes, chicken broth, heavy cream and stir. Cook for 5 minutes, stirring constantly. Add a variety of tomatoes and parmesan cheese.

Put the chicken back in the pan, then put a spoonful of sauce on the breast. Roast until chicken is tender – about 15-18 minutes. Garnish with basil and parmesan, if necessary.
