Low Carb Pizza Casserole

This low carb pizza casserole has solved all the pizza-my desires of the problem! Packed with all flavors of pizzas, sauces, pepperoni, sausages, mushrooms, peppers, and many and many of these delicious cheese casserole pizzas jump over the traditional pasta and replace them with cauliflower.

It’s a gluten-free, keto-dinner casserole That’s so good you won’t even miss the crust!

 

WHAT IS IN LOW CARB PIZZA CASSEROLE?

  • Cauliflower
  • Pepperoni
  • Italian sausages – you’ll want to use Italian ground sausages. If you have to buy Italian sausages that are in the
  • casing (sausage link) just remove the meat from the casing before cooking.
  • Mushrooms
  • Green peppers
  • Mozzarella cheese
  • Low Carb Pasta Sauce-we loved Rao Homemade marinara Sauce. There is no added sugar and it is only 4
  • grams of net carbohydrates per cup 1/2. Feel free to use whatever sauce you like. Just remember it can change the count of food carbohydrates done.
  • Parmesan Cheese
  • Italian seasoning

As with any low carbohydrate prescription, you will want to check the nutritional information on the products you use, especially pasta sauces, and Italian sausages.

As I mentioned we are using the Rao homemade marinara which is 4 net carbohydrates per cup from 1/2. The Italian sausage we used was buying in fresh meat parts from the local grocery store and about 1 carbohydrate per link (I removed the meat from the casing before cooking).

The great thing about pizza is that there are so many ways to make it. Feel free to customize this baked pizza casserole with one of your favorite pizza toppings (as long as they are low carbs!).

HOW TO MAKE LOW CARB PIZZA CASSEROLE:

  • Steam cauliflower. I like to keep things quick and easy so I steam mine in the microwave. Place cut cauliflower in a microwave-safe bowl with 1 cup of water. Cover with a damp paper towel and a high microwave for approximately 3 minutes or until the cauliflower is tender. Don’t overtake it! You do not want to tender the cauliflower, you just want a little soft so there is no need to cook so long in the oven.
  • Drain dry cauliflower dried with paper towel. Set aside.
  • In a large skillet over medium-high heat cooking Italian sausage, about 15 minutes. When the sausage finishes the cooking drains excess fat. Set aside.
  • In the same frying pan add the olive oil and stir-fry the mushroom slices for 10 minutes. This will help eliminate some of the excess water. Set aside when done.
  • Prepare a 13 x 9-inch Casserole dish with spraying with a non-stick spray then spread 1/2 a cup of pasta sauce at the bottom.
  • In a large bowl add cauliflower, cooked Italian sausage, mushrooms, and green peppers. Stir together until well blended.
  • Spread 1/2 of the mixture in a casserole dish. Top with 1/2 cup of pasta sauce, followed by 1/2 of Pepperonis (type their tap among other toppings), and finally 6 ounces of mozzarella cheese.
  • Next spread the topping mixture leftover the cheese followed by a pepperonis (save 10 slices for the top of the casserole), the remaining 1/2 cup of pasta sauce, and 6 ounces of mozzarella cheese.
  • In a small bowl mix Parmesan cheese and Italian seasoning.
  • Sprinkle the Parmesan mixture over the casserole and top with 10 slices of pepperoni.
  • Place in an oven and bake at 400 degrees F. For 30 minutes, or until the casserole is heated and the cheese is completely melted.

  • ½ teaspoon Salt
  • 2.5 ounces Pepperoni
  • 1 Green Pepper, cut into bite-size pieces
  • 1 teaspoon Italian Seasoning
  • 1 tablespoon Olive Oil
  • 2 pounds Italian Sausage, if in casings remove from casing before cooking
  • 8 ounces Mushrooms, sliced
  • 1.5 cups Low Carb Pasta Sauce
  • 12 ounces Mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, powdered
  • 14 ounces Cauliflower florets, cut into bite-size pieces

Instructions

  1. Steam cauliflower. Place cut cauliflower in a safe bowl of microwave with 1 cup of water. Cover with a damp paper towel and a high microwave for approximately 3 minutes or until the cauliflower is tender. Don’t overcook!
