EASY CREAMY WHITE CHICKEN ENCHILADAS

One of my favorite Mexican food (besides Chimichangas) is enchilada. Funny Side Note: Do you know the word “Chimichanga ” is Spanish for Hal-A-Ma-jig? Ha! This recipe for white chicken enchiladas joke though! 😉

SUBSTITUTING TRADITIONAL RED SAUCE FOR WHITE SAUCE

I’m not infatuated with red enchilada sauce. The red sauce can sometimes be so overwhelming in taste to me that I can’t really feel any other flavors on the plate. And sometimes my acid reflux does not agree with anything red. Put white sauce. Now it’s in my alley. A light-tasting sour cream sauce that has a bit of heat from green chili.

WHAT CAN I SERVE WITH ENCHILADAS?

Some shops-bought fried beans or one of my personal favorites-my 3-Mexican rice ingredients! Or, if you like, simply serve with delicious, leafy green salads. Also note, you can use a corn tortilla for this, but I find the flour tortilla just rolled up more easily without tearing like a corn tortilla do.

TIPS FOR COOKING AND SHREDDING CHICKEN:

You can cook chicken for this recipe in several ways. You can bake some chicken breasts in the oven. Just drizzle a bit of olive oil on them and season with salt and pepper and cook for about 35-45 minutes. Or you can boil the chicken until cooked. Or you can use Rotisserie Chicken bought in the shop. It just depends on how much time you should prepare this and what you want from your chickens. Grilled chicken and Rotisserie will give you the most flavor. Once the chicken is cooked, you will want to be damaged using two forks. Or if you have a standing mixer, use a paddle attachment, put your chicken in a bowl and mix until ripped.

WHAT YOU’LL NEED FOR THIS RECIPE:

  • shredded cooked chicken
  • diced green chiles
  • flour tortillas
  • Adobo seasoning
  • Monterey Jack cheese (mozzarella also works)
  • chicken broth
  • sour cream
  • butter
  • salt & pepper
  • flour

HOW TO MAKE WHITE CHICKEN ENCHILADAS WITH CREAM SAUCE:

Preheat the oven to 350F degrees. Spray 9 × 13 baking dish with nonstick cooking spray. Add in 1 cup grated cheese. Season with salt, pepper, and a little Adobo seasoning.
Place the chicken mixture in each flour tortilla.
Roll them all and put them in a baking dish. Just squeeze them all there.
In the medium saucepan, melt the butter. Shake in the flour and let it cook and thicken for 1 minute (Don’t let it burn.)
Add chicken broth and whisk until smooth.
Stir in sour cream and chili peppers. Be sure not to let the mixture boil.
Take the sauce from the heat and pour over the enchilada. Top with the remaining grated cheese.
Bake for about 20-25 minutes. If you want, you can turn Broiler on this high and bake for a minute or two until the cheese is a little brownish and cheerful. Serve warm with your favorite side.

  • 2 cups shredded Monterey Jack cheese (or mozzarella)

  • 1 (4 oz) can diced green chiles
  • 3 tbsp flour

  • 10 flour tortillas (taco size)
  • 2 cups shredded, cooked chicken (can use a store-bought rotisserie chicken)
  • 3 tbsp butter

Instructions
