When it comes to classic spring and summer egg salad recipes always come to mind. It’s light, healthy and can be served for breakfast, lunch, or dinner (I’m always a fan of breakfast items for dinner).

But if you want to kick your salad recipe into a notch and make your stomach happy, it’s as simple as adding avocados and some fresh herbs. Think of it as the California spin on the classics. And I guarantee you will love it!

 

TIPS FOR THE BEST AVOCADO EGG SALAD RECIPE

  • Hard boil your eggs in front of time. The key is not too long your hard-boiled egg. You definitely don’t want the green tones around your egg yolks. Make sure to watch my tutorial of boiled eggs for successfully boiled eggs at any time.
  • Don’t be too mash the avocado. Natural avocado cream and as soon as you stir the ingredients together avocado will start to break down. It’s always good to have a bit more chunky, than the texture of guacamole.
  • Use fresh herbs. I use scallion and parsley, but you can also use Cilantro, Basil, or even tarragon. Have fun with flavor.
  • Use homemade mayonnaise. Once you make your own homemade mayonnaise you will never buy it from the store anymore. It’s very easy and tastes much better. If you prefer not to use mayonnaise, you can also use sour cream or yogurt (and opt for milk-free on them too).

  • 1 tbsp parsley, chopped
  • 1 tbsp chives, chopped
  • 3 hard-boiled eggs, roughly chopped
